I’ve been everywhere…

Girl Scouts, work, workout, eat, sleep, repeat.  That’s been my week.  And now my parents are in town, so it’s all of those things and entertaining them…

Cookie season is in full force, check out the Girl Scout Cookie Fiat.  I had to go to the Girl Scout store 3 times this week (good thing its REALLY close to my office).

 

We got 2 new girls this week, so they needed uniforms and all that jazz.  I need to go back Tuesday, because the store was out of American flags.  Really?  How do you run out of something that goes on every uniform?

I’m still keeping up with the journaling, always do.  It’s the blogging it part that i’m not so good at, lol!

Recipe Review: Morning Glory Muffins

I’m not really a muffin person, but I was looking for something grab-and-go for the weekdays.  This fit the bill was tasty and healthier 🙂

Gluten Free Morning Glory Muffins

Source:  Food.com, serves 12

1 cup any type gluten-free flour (white flour works if you can eat it)
1 teaspoon xanthan gum (must use if not using regular flour)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/8 cup splenda (or other sweetener)
1/4 cup unsweetened coconut
1 cup carrot, grated
1/4 cup raisins
1 Mcintosh apple, diced (I’ve used different types)
2 eggs (or half cup egg beaters)
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1 teaspoon orange extract
1/4 cup soymilk (I used coconut milk)
Directions:

Preheat oven to 350°F.

Mix dry ingredients.

Mix wet, then add into dry.

Fill cups to about 2/3 cup full. (I can’t follow directions, lol)

Bake for about 22 minutes. (I baked for 30)

The result is a snack that is packed full of fruits and veggies, could add nuts if desired.  Great with a smear of coconut oil on it 🙂  They aren’t pretty, but they sure are tasty.  I like this recipe because the muffins are almost all fruits and veggies, there is very little batter.  Not exactly like the ones my mom used to make, but close.  I’ve made this version twice already, think next time i’ll experiment adding different fruits and veggies.

These could  be made paleo if you use almond or coconut flour.  They also freeze very well.

1 muffin is 2 Weight Watchers Points Plus made with my modifications.  If you use different eggs, flour, milk, etc. your values may vary.

If using for a breakfast, i’d suggest pairing with a protein source to make it go further.  I’ve been using them for snack/dessert.

Don’t usually do 2 regular size apples in a day, but I misjudged how filling the squash pie and my lunch would be.  Didn’t want myself to get too hungry and it’s what I had.  Gotta do, what you gotta do 🙂

Date night

Saturday was a total lazy day for both of us.  I couldn’t get the temperature in the house right on Friday night, so I kept waking up and messing with the thermostat because I was hot, then woke up freezing!  I got rest, but not as much as a I needed.

I spent the day getting things back in order at home and catching up on things.  Dan spent most of the day lounging and napping since he stayed up really late on Friday night. 

I can’t honestly remember the last time Dan and I had a real date night.  I can remember some attempts, but I didn’t make it to the end of the evening of some, due to getting sick.  I made it through the whole evening this time 🙂 

We set out for downtown Austin at 5.  First stop, Garridos.  I love their food and all but 2 items on their menu are gluten-free.  Another plus was that I had a Groupon, I LOVE Groupons.  Excuse the crummy photos, apparently the point-and-shoot doesn’t do well in a really dim restaurant.

Started off with the crab-guacamole.  It was really good, but super small! 

I had the Snapper. Wasn’t impressed with the plating on my fish or the fact it was on top of a tostada which was on top of everything else, that was kind of odd.  It actually looks more like fish tacos!

Dan had the Steak Vaquero.    It was really tasty, I actually cleaned his plate when he was done and ate the last few bites of the steak and the rest of the veggies.  Didn’t try the potato cakes.

We both liked our food, but Dan wasn’t a fan of the potato cakes or having his photo taken.  

Next stop was the Paramount Theater to see comedian Bill Burr.  I love the Paramount, it’s really old, historic, and beautiful (same architect/builder as the Majestic in San Antonio).  It was fabulous and I liked the guy who opened for him too (no idea what his name was).   I love comedy shows, although I hadn’t been to a live one in quite some time.

Afterwards we came home, had dessert, and watched some tv before calling it a night.  It was just one of those days I needed.  Snail’s pace slow and relaxed.

Crash

I only thought last week and the beginning of this past week were crazy.  That was only the start.

Thursday was another 14 hour work day, but the kind that went by fast and gave me the warm fuzzies.  I had a wonderful time attending, presenting, and networking at the conference in Grapevine.  I had 2 presentations and then sat on a panel at the end of the day.  I was pleased with how everything went!

What I wasn’t pleased with is that I didn’t get on the road until 6 pm.  I thought momentarily that I would just suck it up and pay out of pocket for another night at the hotel.  Plus Adam Hood was playing in town that night and I would have loved to stay and see him at that venue.  Instead, I got on the road and tried to focus on just getting home safely.  Stopped in Temple for a small dinner and to buy lunch for the next day (I knew i’d have no time to make anything on Friday morning).  I got home just after 10 pm, I was exhausted. 

The exhaustion continued into the next day.  Had I not needed to take the vehicle back, I probably would have stayed home from work.  I put in a full day in the office, I was so busy I barely noticed being beat.  Old boss wanted a private lunch with a few people, so I ended up going out with them unplanned.  Wasn’t a fan of the restaurant or my food.  Hate when that happens.

By time I got home from work, I could barely function.  I took a nap, to prepare to go out to San Marcos to see Adam Hood with Dan and some friends.  I woke up, ate the Chipotle that should have been my lunch.  I was still dead to the world.  I told Dan I just wanted to go back to bed.  So he went out, I went to bed.  I was that tired.

Despite the hectic crazy end of the week, I’m not going to forget about the food journal challenge…

Thursday

B:  3 eggs and banana
S:  apple and mini Lara bar
L:  I couldn’t eat the catered BBQ lunch (well, I wasn’t just going to eat meat), so just like last year, I went and got take out.  Freebirds carnitas salad with guacamole (because it’s necessary).  I’d never eaten at Freebird’s before, I liked it.  They had even more choices for toppings for your burrito, taco, bowl, etc.  I was giddy that they offer grilled jalapenos, roasted garlic to name a few…


S: fruit cup (mango, strawberries, and kiwi) and cobb salad.  Believe it or not, 7-11 has a really nice selection of fresh healthy foods.  I tossed the dressing, it’s not really car friendly, but as I found out going down the highway, neither is salad in general.  I should have mixed the meat in BEFORE I got into the car.  I accidentally flipped the tray that had the chicken and bacon all over the place.  Sadness, because it was tasty chicken and bacon 😦

Friday

Aside

Run around Wednesday

There was lots of running around, but none of the workout variety.

Yesterday was a crazy day.  Left the house at 6 am, drove 3.5 hours.  Then in and out of the car all day long (minus my lunch meeting), then rush to the hotel, check-in, then business dinner.  After that it was time for bed!  YIKES!

Step back and think

One of my friends got some news earlier this week that she didn’t think she’d be receiving.  Cancer.  When she had her thyroid removed recently, it wasn’t expected.  But when the results came back from what was removed, it was positive.

Please say a prayer for her and her family.  She begins treatment in the coming weeks and the prognosis is good.  They expect her to be cancer free soon.

Really makes you sit back and think about your own life.  I’ll tell you once I really started pondering things, I had more gratitude.  I wrote several notes to co-workers yesterday that either helped me recently or needed help.  One co-worker has been struggling with wedding planning stress, I wrote her a supportive card, offering her help and cheer.  I’m a fan of little notes and cards, but sometimes I get too busy and forget to stop and take the time to thank/support/encourage someone.

I may have gotten to work super early, but I made myself leave on time.    My acting boss actually made me “off-limits” to others yesterday, which was VERY helpful and I had a great productive day.

Drove to Round Rock, weighed in at Weight Watchers, did a run in the area, then grabbed a drink and attended the WW meeting.  Hadn’t seen my old At-Work leader in a while, it was good to see her.  And it was the most crowded meeting I have EVER been to!  Maybe 2 empty seats total.  WOW.

I did speak a little about my 5 year anniversary on Weight Watchers and I had quite a few new people come up to me after the meeting to ask questions and offer congrats.  Good meeting.  I hope at least 1 person will be inspired.

After the meeting and eating a quick dinner.  I took the time to read a few chapters in my book last night too.   Hopefully I can find time to unwind and destress by reading or other methods, because I need it for my cortisol issues and my sanity, lol!

I’ll admit, it takes the right mix of protein, fat, carbs, and volume to keep me satisfied. But with that being said, I don’t track nutrients or calories or fat. Just Weight Watchers points and their good health guidelines.

I broke a rule

I do not like Dr. Oz, I do not watch Dr. Oz.  I watched him yesterday because he had Jennifer Hudson on to talk about Weight Watchers for the whole show.

While I love her and think she’s a good spokesperson and role model, I wasn’t exactly thrilled with the show.  I hope it motivates more and more people to join Weight Watchers and to lose the weight for good, just like I did 5 years ago.

Weight Watchers is flexible and a great program for that very reason.  I like that she stressed that it is a lifestyle change and that nothing is off limits.  I like that she talked about balance.

For the parts I didn’t like.

  • I didn’t like her idea of “moving more”.  I know WW is designed to work without activity, but I thought her activity explanation was very lacking
  • The power foods shopping list was offered up, but they didn’t explain really what that means
  • Good Health Guidelines?  She skated around some, never really explained how it’s the focus
  • She never touched on the science behind the program
  • How there are 2 methods of doing the program and both of them take ZERO time
  • How planning really pays off
  • That eating 2 bananas is a good idea if you are in a hurry or need a quick meal.  I cringed when she said that
  • Turkey and lots of it.  I love turkey, but folks, you do not have to sub turkey for everything.  Buy lean cuts of meat and enjoy red meat if you like red meat or eat meat at all.  I know she doesn’t eat red meat, but she really only touted turkey and eggs.  There are other lean proteins that are  good sources.

Come back home

I think Dan needs to quit going out of town, lol.  Because when he’s out, it seems like my work and personal life are 100 miles an hour faster than normal.  I should really have more free time when he’s gone, but I don’t.  I always *think* I am going to get special projects, or DVR, or reading done.  This seldom happens.  Work usually gets nuts and I work crazy long days and cut into my free after work time.

He’s gone for almost another week.  Flies back from skiing today, but out to Canada tomorrow for work.  He’s actually spending the night near the airport, because his trips are that close together.  I’ll see him sometime next week when I return from Houston.

Mom left Monday morning.  It was dark when I got to work and dark when I left work.  This time of year, that isn’t hard, but I worked WAY too long, but it was necessary.  Sad that I finally had a free Monday (no meetings after work) and didn’t get to do one of the Monday activities I keep meaning to do.  By time I got home, I was ready for bed 😦  I pretty much ate, unloaded the car, read some in a new book I got, and that was it.

New rules of the work gym

I never learn.  The office gym is ALWAYS a bad idea.  It’s not crowded before work and I only use it when i’m running late (and can’t make it to Gold’s across the freeway).    I was running late on Tuesday, so I settled for the work gym.  BAD MELISSA!  There are no rules and it drives me nuts!  Here are the rules I am proposing…

RULES OF THE OFFICE GYM/LOCKER ROOM

  • The bathroom stall is for people using the gym.  It’s not your own secret stall to do your nastiness in. 
  • There are only 2 showers.  You cannot expect to reserve them before you workout.
  • The signs say don’t leave stuff overnight.  And please don’t leave it in there for months at a time, it stinks.
  • Keep your fashion comments to yourself when others are getting dressed.  I don’t care what you think about my sweater.  I do care that you are watching me like a hawk, it’s creepy.
  • If you are going to bring an IPOD into the gym, bring headphones too.  I don’t want to hear your crappy music.
  • Wear appropriate clothing.  Wearing your work clothes is just gross.
  • Wear appropriate shoes.  Wearing dress shoes is hard on the equipment and one day you will probably fall on your face.  I will laugh then.
  • Re-rack your weights.  It’s common courtesy and sense.  Really.  It’s not ok to leave stuff strewn all over the room.
  • When you move to another piece of cardio equipment, shut the treadmill off.  There is no reason to leave it running while you ride the bike.  Really.  I promise it’ll turn back on when you are done.
  • The weight bench is not a locker room bench.  Please don’t bring your briefcase and lunch into the gym and put it on the weight benches.

That’s just my starting list.  I may need more than 1 piece of paper.  Yes, i’m only joking, but that all really happens, every single time I go in there.  And I only ever see the same 2 people that early.  Makes your head hurt, doesn’t it?

The tuna-spud cakes were tuna and sweet potato which were pan grilled.  I guess they had potential but if I hadn’t added spices (recipe didnt call for any), they would have been super bland.  Not sure i’ll make them again.  I thought they’d also be a filling combo with the rest of my lunch, but they sadly were not. 

S:  half serving of pistachios, other half of apple

D: same as Monday (I recycled that photo).  Pulled pork, slaw, but this time with broccoli., carrots came later

The New Year

LIFE

The last day of 2011 didn’t really go so swell.  I had to bail on my morning run because of cedar fever 😦  We went out to dinner and then to watch the Auburn game, then to see Hayes Carll.  I only made it through half of the Auburn game when I started have what I suspect was a gluten reaction to dinner.  The only thing I could think of was that it was some of the sauce I took from Dan’s food and put on my overcooked fish.

Dan brought me home, we finished the game, and then I went to bed, he went out.  Turns out the concert wasn’t that great either.  Bummer.

RUN

Every year that i’ve been a runner, i’ve run on New Year’s Day.  Nothing like starting the year off right!  First three years I did a 5K, last year I ran with June, this year I did a group run.  My sister was supposed to come too, but she texted and said she was sick.  I ran anyhow, even though the cedar was still bothering me.  Plus I’d signed up for Amanda’s Resolution Run challenge.

Did the Hill Country Running Company’s resolution run this morning.  They had routes of 2-12 miles.  I did 10 total (3 before the official 9 am start).  Good time and got to meet some peope i’d never met before.  Plus I found out the new Brooks Trance 11’s come out this month!!!

I had to rush home after errands, to ditch the clothes, take more meds, and get into the shower to wash all of the cedar pollen off.  Didn’t want to contaminate my house or myself even more.  Today was better with it, but still not pleasant.

Took down all of the Christmas decor.  Sad, but once I started, I could not wait to get it all down and put back into the closet! 

FOOD

I also joined the Run to the Finish food journal challenge. 

I probably won’t remember to photograph everything, but the recording it here shouldn’t be hard, since i’ve journaled my food for the last 5 years (when I joined Weight Watchers). 

Today’s eats:

B:  brown rice, with 1T crushed almonds (not normal for me at all, but had leftover rice from last night, trying to calm my stomach from the gluten reaction)

S:  pineapple, honeydew, and canteloupe at the run party.

L:  Sautee bowl with chicken, mushrooms, mixed italian veggies and EVOO.  Adora calcium disk.

S:  pistachios and an orange

S:  mixed veggies and hummus

D:  baked pork loin chops, stuffed mushrooms, jalapeno black-eyed peas, salad

S:  dark chocolate and almonds

The mushrooms were a new recipe from the Whole Foods “Whole Deal” magazine from December.  I tried putting cheese on Dan’s to get him to eat them.  Nope, he ate one and that was it.  He says he can’t accept the texture.  Humpf!  I thought they were awesome.

Trying some new things in the next week, some for Dan, some while he’s gone.  Dan will be gone January 5-13, then I am gone Jan 13-15 and again Jan 17-19.  I may see him again before the end of the month, lol!
